Seared Filet of Beef and Celery Root Purée with Rosemary Salsa Verde

This dish is a modern and fun riff on what we might call meat and potatoes. The celery root resembles potato, but has a much more interesting flavor.

Finishing the dish with a bright rosemary salsa verde references the old with rosemary, yet introduces new brighter flavors with fresh light herbs and zingy
